If you are anything like me, you HAVE to have something sweet after dinner. But, you don't always want a cookie. That's false, I do always want a cookie, however, I know it's best for my health if I don't eat piles of cookies everyday.
I have come to the rescue for anyone who feels the same way, I've created an easy, healthy, no-bake sweet treat that you can whip up in 15 minutes! The best part about these treats is you get the benefits of Matcha, Dark Chocolate, and Peanut Butter in one small pop-able dessert!
4 oz Chocolate 1 tsp Matcha powder 4 tbsp Peanut butter, coconut butter for nut-free Coconut simple syrup, optional*
In a microwave-safe bowl, melt chocolate. Microwave for 20 seconds then stir. Continue to microwave for 10-second intervals, stirring well each time, until completely melted.
Line a mini muffin tray with liners. Add about 1/2 teaspoon into each liner. Swirl to coat the sides with chocolate. Put the tray in the freezer for about 3 minutes to firm.
In a small bowl, combine peanut butter, or coconut butter, and matcha powder. (You can also add 1/2-1 teaspoon of coconut simple syrup to the filling if you want it sweeter.) microwave for 25 seconds.
Remove the tray from the freezer. Add about 1/2 teaspoon of matcha butter filling to each chocolate cup. Tap the tray lightly on the counter to spread or use the back of your measuring spoon.
Drizzle the remaining melted chocolate over the top of each cup. Tap the tray lightly, or use your measuring spoon, to gently spread the chocolate over all the filling.
Place the tray back in the freezer for another 3 minutes.
Enjoy immediately or place in a container and store them in the refrigerator!
