Anyway, she lives a life that is mostly dairy free, eggless, and gluten free, due to autoimmune diseases she has. She didn't find out about these until she was 30! That is crazy! I am happy she is living a tummy-ache free life (mostly lol) and I could make her something that made her body and soul happy.
You may be thinking, vegan....gluten free.... banana bread?! It has to be dry and it has to be subpar at best. FALSE! You wouldn't even know it was vegan or gluten free. It was phenomenal and so easy to make. One bowl, no mess, full hearts and stomachs at the end!
1 3/4 cups gf all purpose flour
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup vegetable oil or vegan butter (oil makes it more moist)
1 teaspoon vanilla extract
4 large bananas
1/4 cup almond milk
1 cup allergy friendly chocolate chips
Preheat oven to 350 degrees F. Grease your loaf pan.
One bowl method: In a medium sized mixing bowl, mash bananas, add oil and vanilla extract, mix again. Add the flour, sugar, baking soda, baking powder and salt, and mix well, a few lumps is ok. Add milk, mix. Add chocolate chips.
Pour batter into a greased loaf pan. Bake for about 50 min – 1 hour.
